The wheat flour is obtained through the grinding of the grains of wheat. In the classic Flour 00 we use, through a process of refining, just the central part of the grain. The whole wheat one, instead, being not sifted, includes even the Aleurone, as to say the covering which protect the grain, rich of healthy nourishing properties.
The whole wheat flour, surely rich of fibres, increases the sense of overabundance, contains less calories compared to the refined one, regularises the intestinal function and acts like anti-cancer.
As guarantee of all of that, the WHO (World Health Organization) in “Diet, nutrition and the prevention of chronic diseases”, a handbook of the right nutrition, among the other pieces of advice, invites you to increase the consumption of whole wheat products.
